Why The Best Sushi May Now Be At Newark Airport

Browsing the to go food offerings at airline terminals, one of the choices I would never make is sushi; I would always wonder where it came from, how long it’s been sitting there, etc. But due to a new partnership between OTG, the company that operates the food outlets at Newark Liberty International Airport’s Terminal C along with eight others in New York. Houston and Philadelphia, and Tokyo’s Tsukiji Market, famed for its superlative quality fresh fish, the sushi that went on sale in the terminal’s new Tsukiji Fishroom within the Global Bazaar now ranks among the best in the world. United Airlines, the terminal’s occupant, flies it in directly from auction at the market several times a week where it is formed into sushi on site. (The knives used are tethered in place and numbered, fulfilling security concerns.)



This addition is another step in OTG’s makeover of that terminal’s food service options to give the 38,500 potential customers who pass through Terminal C every day what the OTG executives have observed that they want—fresher, healthier food. “Our customers are everything,” explains Rick Blatstein, OTG’s Chief Executive Officer. “So we’re always interested in elevating the levels.” Apart from making all of the food in their outlets on site, from mozzarella to chocolates—"If I can brag about anything, it’s that we have the smallest freezers here. We bring in everything fresh every day” says Blatstein- they’re also considering how they can next use the preference information that they’re gathering in coordination with United’s boarding passes. “Probably by next year, we’ll be able to send recommendations of what a customer would like, whether they’re vegetarians or like steaks, when they’re passing through the terminal,” he says.



In the meantime, customers with a preference for sushi can pick up the new Tokyo imports pre-wrapped  at Tsukiji Fishroom or soon at their CIBO Express Gourmet Markets; it will also be served at their restaurants Surf and Caps Beer Garden.  And for those fliers invited into United’s secret restaurant Classified, if you ask for it, it can be served there too.
